Matchkuchen - Endgültiges Rezept

In den letzten Wochen, in dene ich keine Seife gemacht habe, habe ich mein Matchkuchenrezept perfektioniert. Es hat bestimmt 10 Versuche gebraucht bis ich zufrieden war...und sehr viele Leute mußten ganz viel Kuchen essen;)

In the last couple of weeks when I didn't make any soaps, I tried to perfect my Match Cake Recipe. I needed at least ten attempts before I was satisfied...and a lof of people had to eat lots of cake;)

Nach meinem letzten Post fragte jemand, was Matcha ist. Matcha ist japanisches Grünteepulver. Es wird unter anderem zur Teezeremonie gebraucht. Das Pulver ist ganz fein und wird mit Steinmühlen ewig lange gemahlen.
In Japan gibt es von Matcha-Schokolade, über Matcha Latte und Matcheis fast alles mit Grünteegeschmack...ich liebe es!

After my last post about Matcha Cake somebody asked what Matcha actually is. Matcha is Japanese Green Tea Powder which is used in Tea ceremony, for example. The powder is very fine because it has been ground by stone mills for ages.
In Japan you can buy Matcha Chocolate, Matcha Latte, Match Ice Cream and almost everything else with green tea flavour....I love it!

Hier nun mein ausgetüfteltes Rezept:
Here my fine tuned recipe:

300g Mehl / Flour
20g Matchapulver / Matcha Powder
1/4 TL Natron / 1/4 Teaspoon Baking Soda
1 TL Backpulver / 1 Teaspoon Baking Powder
140g Zucker / Sugar
1 Päckchen Vanillezucker / 1 Satchet Vanilla Sugar (8g)
3 Eier / Eggs
125g Kokosfett / Coconut Oil
150g Philadelphia Joghurt oder Balance etc/ Philadelphia Cream Cheese (Fat reduced)
2-3 EL Milch / 2-3 Table Spoons Milk

Erst die trockenen Bestandteile vermischen, dann die Eier, Frischkäse, Fett und Milch (zum Einstellen der Konsistenz) dazu.

Start with mixing the dry components, than add eggs, cream cheese, oil and milk (to adjust the texture).

Im Umluftherd ca. 1 Stunde bei 160 Grad backen. Wenn der Kuchen anfängt, zu braun zu werden, mit Alufolie abdecken!

Bake for approx. 1 hour at 160 degrees. When the cake starts to get too brown, cover with tin foil!



In meinen früheren Versionen hatte ich das Problem, dass mir der Kuchen meist zu trocken wurde, wo ich ihn doch saftig und luftig wollte. Nach vielem Ausprobieren habe ich dann die Lösung gefunden, eine Mischung aus Natron und Backpulver zu benutzen. Zu viel Backpulver machte den Kuchen zu trocken, zu viel natron machte noch viel seltsamere Dinge: Der Kuchen wurde braun und schmeckte nach Schokolade (Nicht das das schlecht wäre, aber das war ganz und gar nicht geplant!)

Der Frischkäse bringt auch noch zusätzlich Saftigkeit!

Die Zuckermenge kann je nach Geschmack angepasst werden oder auch durch einen Teil Honig oder sogar Steviapulver ersetzt werden.

Als Öl eignet sich jedes geschmacksneutrale Pflanzenöl, aber ich habe Kokosfett benutzt, weil ich zum Seifemachen so viel davon habe;) Nur keine Butter benutzen, denn der Buttergeschmack passt nicht zum Grünen Tee!

In my earlier versions the problem was that the cake got too dry most of the time when I wanted it to be moist and fluffy. After a lot trial and error I found that the solution was using a mixture of baking soda and baking powder. Too much baking powder made the cake dry, too much baking soda did even stranger things like turning the cake brown and making it taste like chocolate (which might have been nice any other time but not what I wanted here!)

The cream cheese also adds some more moisture!

The quantity of the sugar can be adjusted according to taste...or you can use part sugar, part honey or even stevia powder.
Where the oil is concerned, I used coconut oil because I have so much for my soaping. Any other plant oil which doesn't have a strong taste is also ok...but don't use butter! It doesn't go well with the green tea flavour!





Der Kuchen ist wahrscheinlich nichts jedermanns Geschmack, aber wer gern grünen Tee mag, der findet vielleicht auch an diesem knallgrünen Kuchen Gefallen!

The cake might not be to everybody's taste but those who like green tea might take to this bright green cake!

  1. Ein wirklich sehr interessanter Kuchen... nur finde ich in deinem Rezept keine Zutat die Matcha heisst...? *kopfkratz*
    Wo bekommt man denn das und wieviel hast du schlußendlich reingetan?

  4. Supi! Dann ist das Rezept ja komplett ;o)
    Klingt echt sehr interessant! Vorstellen kann ich´s mir grad nicht wirklich, aber vielleicht muss man´s einfach nur mal probieren!
